Here's the scoop on coffee's flavor: the taste comes from compounds locked into roasted coffee beans. Add hot water, and those flavors escape into your pot -- but not all flavors escape at the same time, says Harold McGee, food science writer and author of On Food and Cooking. For example, sour flavors, acids, come first and the plant carbohydrates responsible for coffee's body come later. Taste for yourself with this counter-top chemistry experiment.

This young guitarist’s debut album is the perfect introduction to his artistry, showcasing as it does four leading 20th-century composers of guitar music – Antonio José Palacios, Alberto Ginastera, Antonio Lauro and Julio Gentil Montaña – composers who in turn represent four different countries and four styles of music that differ widely both aesthetically and in terms of the traditions from which they spring.

Composer: Alberto Ginastera, Julio Gentil Montana
Artist: Deion Cho guitar

Among the most promising Spanish composers of his generation, Antonio José was acclaimed by Ravel and counted Lorca and Dali among his associates, but like Lorca, he was executed by a Falangist firing squad during the Spanish Civil War. Only 34 years of age, he had accumulated a catalogue of music impressive not only for its depth but its sophistication, exemplified by the substantial Guitar Sonata which is his best-known work. The Sonata by the Argentine Alberto Ginastera is no less imposing in structure, and harmonically much more adventurous than José’s bluesy neo-classicism. The four Venezuelan waltzes by Antonio Lauro are brief and charming early works, the first three dedicated to his daughter and two nieces, the last named Yacambú after an orchid-rich national park in the northern Andes. The first movement of the fourth Colombian Suite by Julio Gentil Montaña (1942-2011) is likewise named after that country’s capital, Bogotà, and it is followed by three interpretations of national dances, concluding with a snappy Porro.

The 23-year-old Deion Cho is of South Korean origin, currently studying and working in Spain. He has given the album his signature with an arrangement of a popular Korean folksong, ‘About 500 Years’, clearly inflected by his years of work in Hispanic and Iberian music.

For a collection of small nations at the northern fringe of Europe, Scandinavia produced in a relatively short space of time a remarkable quantity of great musicians – including from the late classical and early periods Berwald, Pacius and Crusell, to Gade, Svendsen ,Sinding and Grieg in the mid 19th, and of course Sibelius, Nielsen, Laangaard and Stenhammer at the end of the 19th who became major international composers in the first three decades of the 20th century.

Edvard Grieg (1843 - 1907) of course will always be remembered as the composer of the highly effective A minor piano concerto, and his incidental music to Ibsen’s play Peer Gynt. However, it is as a miniaturist that Greig’s true genius lies. Grieg was a very capable pianist, and had in fact made his early career as a concert pianist, and his songs and solo piano music form the heart of his output. The early piano sonata although interesting shows clearly why the less restricting forms of the miniatures for solo piano suited his genius. The Lyric Pieces and Peasant Dances display his keen ear for traditional folk music, matched probably only by Bartok and Kodaly.

The 66 works that comprise the 10 books of Lyric Pieces date from 1867 to 1901, and are extraordinary, exquisitely crafted works that can stand comparison to any of the great sonatas of his contemporaries. This set includes the complete Lyric Pieces, the Sonata, The Holberg Suite and the lesser-known piano works of this great composer who captured the very essence of his native Norway in music.

About this Album:
20th-century composer Ernest Bloch forged a unique path, firmly establishing his Jewish identity through his music and thereby creating many works of great spiritual expression. Born in Geneva in 1880, he studied in Belgium and Germany before moving to America. Although he returned to Europe, he eventually became a US citizen, abandoning Switzerland forever due to the encroaching threat of Nazism. It was in the States that his music was truly appreciated for the first time; in New York, he conducted renowned orchestral concerts of his own works and became known as the “Jewish Composer”, winning the Coolidge Prize for his Viola Suite. It was around this time that he began to compose for the violin.

The perfect starting point for exploring Romantic piano music. It features historic recordings of a truly excellent standard, including Blumental with the Vienna Symphony Orchestra under Helmuth Froschauer, the Orchestra of Radio Luxembourg with Pierre Cao accompanying French pianist Dosse, Boehm with the Westphalian Symphony Orchestra under Siegfried Landau, and Antal Doráti conducting the Royal Philharmonic Orchestra with Ilse von Alpenheim.

This 40 CD set contains a wealth of 19th century piano concertos written by composers who for some reason or other have been neglected by history, so called “minor masters” who may have lost the battle against the giants but nevertheless wrote very attractive, impressive and brilliant concertos for the piano (which in many cases was “their” instrument).

To name just a few: Hummel, Field, Czerny, Cramer, Ries, Clementi, Thalberg, Moscheles, Litolff, Kalkbrenner, Lyapunov, Balakirev, Medtner, Glazunov, Henselt, Moszkowski, Scharwenka and many more, over 60 composers!
Most of the recordings come from the rich and unique VOX catalogue, featuring such excellent pianists as Michael Ponti, Felicja Blumenthal, Hans Kann, Martin Galling, Jerome Rose, Roland Keller and many more.

The Mass and songs by Guillaume de Machaut are probably the earliest consistent body of work attributable to a single composer in the Western canon. As such, they form a foundation stone to centuries of both melody-oriented song and contrapuntal polyphony that come thereafter. They have their own rich recording history, too, from the gentle and sometimes pedestrian efforts of pioneering groups like Pro Musica Antiqua and the New York Pro Musica, through to the dynamic and swinging recordings of the Orlando Consort.

Natural World: The Octopus In My House
With its three hearts, blue blood and boneless body, the octopus is the closest we may get to meeting an alien. They evolved from a common cousin more than 500 million years ago. But they're also intelligent creatures, with proven problem-solving abilities. So what happens when you invite an eight-legged alien into your living room? This film follows marine biologist David Scheel as he tracks his complex, evolving relationship with his own octopus. Using David’s first-person narrative, and linking his discoveries to octopus stories from all over the world, the film offers an insight into the extraordinary intelligence and behaviour of these incredible creatures.

Natural World: Hippos
The hippo. A territorial beast that spends most of its time in water. An aquatic mammal that can't swim. A two-tonne hulk that can sprint faster than a human. And a seemingly placid oaf that guards its family with fierce cunning. Using specialist camera technology to get up close and personal with hippos for the very first time, this film follows these animals through the seasons in the Okavango Delta. It reveals that while hippos may be boisterous, aggressive and bold, they are also sensitive, sociable and often comical. An intimate, immersive portrayal revealing a side of hippos never seen – or heard – before.
